The entrance
The hotel opened in 1930 and sat shut for twenty years. The facade is the original one. What sits behind it looks nothing like what you see from the street.
The table
Five courses between Bangkok and Havana. The kitchen opens before the curtain does.
The dining room
Two levels around an open centre. Every table faces the same point, because the show happens among them and not in front of them.
The show
Resident cabaret. Four different shows, one a night.
There is no
stage
The room is the stage. The cast comes in through the same door the guests do.
After
dark
The Mekong bar under its own neon. Wednesdays, Fridays and Saturdays, a DJ until Ocean Drive goes dark.

One whole bluefin, cut live at the counter. Akami, chu-toro and o-toro, served the moment they come off the loin.
