Tuna Cutting

A whole bluefin comes to the counter and Chef Bee breaks it down in front of the room. Then it is yours, as much as you like: sushi, sashimi, rolls and hand rolls, in three cuts — akami, chu-toro and o-toro. When dinner is over, the night carries on at After Dark.

Wagyu Omakase

A single graded block of wagyu, cut down at the counter and put over fire a piece at a time. The chef builds the run in front of you — you eat each course the moment it comes off the grill, in the order he decides.
